1 pound ground pork or turkey
3/4 cup fresh squeezed lime juice
3 tablespoons minced lemongrass
2 tablespoons minced garlic
2 tablespoons minced shallots
2 tablespoons minced ginger
1 bunch cilantro
3 tablespoons fish sauce
1 tablespoon red chili flakes (more if desired)
1/2 tablespoon kosher salt
Romaine hearts, leaves only
METHOD OF PREPARATION:
In a large sauté pan, brown the meat. Save the grease.
Add garlic, shallots, ginger, salt, red pepper flakes and lemongrass. Cook till softened, about 5 minutes.
Add lime juice and fish sauce. Reduce for 1 minute.
Fold in Cilantro.
Serve with Romaine heart leaves.
